Use what is in the refrigerator.....Casserole

So, we needed to use what was left of the asparagus before it got bad. We also have a bajillion eggs.

So I made a Friggen casserole.

A casserole is pretty much anything you want. So I just used what I had. Eggs, cheese, asparagus, mushrooms, bacon.

Ingredients

6 eggs

1/8 cup heavy cream

1/4 cup unsweetened almond milk

171g Asparagus

7 slices of bacon chopped

3oz white mushrooms

1/2 cup mozzarella cheese

1/4 cup mozzarella cheese (separated)

Salt & Pepper to taste

Garlic Powder

Recipe:

*Pre-Heat Oven to 350°

1.Chop bacon and cook in pan until crispy

2. Add eggs, Heavy cream, Almond milk, spices to mixing bowl and mix!

3. Boil some water.

4. Chop up all but 6 of asparagus into small pieces. Add ALL asparagus including spears, to boiling water for a minute or two until slightly tender.

5. Wash and slice mushrooms.

6. Add egg mixture to greased baking dish.

7. Add bacon, 1/2 cup cheese, chopped asparagus, to egg mixture.

8. place remaining asparagus spears on top of egg mixture evenly spaced.

9. Add remaining cheese on top.

10. Bake for about 25 minutes.

11. Remove and let cool.

12. EAT!
