Buffalo Chicken and Cauliflower Bites

Okay. I made this up myself. And there are definitively changes I would make.
But they were still tasty as hell like this!

Disregard the ridiculousness of this photo. I was going for fancy with my refrigerator leavings. (Refrigerator Leavings = making dinner out of whatever is currently available)
I made this meal with random stuff that needed to be used before it went bad. I would change some stuff without hesitation, if I was going to the market to buy new ingredients.
Ingredients for 4 servings:
7 Oz of grilled chicken breast
10 Oz of steamed cauliflower
2 tbsp of Ken's Blue Cheese dressing
2 tbsp of Frank's Red Hot Buffalo Sauce
1 cup of shredded Mozzarella Cheese (Divided into 2)
2 tbsp grated Parmesan Cheese
2 tbsp Butter
Three Green Onions
Salt & Pepper
1 tsp Italian Seasoning
Celery Salt to taste * I did NOT add this, but next time I will.
Fresh Blue Cheese Bits.* I did NOT add this, but next time I will.
24 cup muffin pan. Like shown below.

Total Carbs: 4g
Net Carbs: 2g
Fat: 18g
Protein: 23g
Recipe:
1. Steam that cauliflower until tender, then add it to a food processor or Nutribullet until in small bits. Try to leave some texture here. I almost mashed them, probably would have been better with some bite.
2. Preheat Oven to 400° F
2. Dice that chicken, then add it to a food processor or Nutribullet until in small bits.
Add both chicken and mashed cauliflower into large bowl.
3. Add 1/2 cup Mozzarella cheese and save the remaining 1/2 cup for topping.
4. Melt butter. Add to bowl.
5. Chop green onions. Add to bowl.
6. Add the rest of the ingredients.
7. Mix that mush up.

8. Scoop about a tbsp of mixture into each cup of cupcake pan.
9. Evenly top with remaining mozzarella cheese.
10. Throw that sucka in the oven for 15 minutes.
12. Rotate and cook for an addition 10 minutes or until toasty brown.

13. Let cool for a bit and enjoy with a side of blue cheese or ranch, or more hot sauce if you are badass like that.
